The Assistant Sommelier is accountable for beverage and wine service and sales within dining outlets, managing operational aspects for venues accommodating up to 450 guests during service. They play a vital role in ensuring seamless operations and take ownership of their outlet’s performance. Decision-making to enhance guest experiences is a key responsibility, aligning with the company’s aim to deliver the ultimate travel experience. The Sommelier ensures team members understand Seabourn’s vision and mission, fostering adherence to established guidelines. Reporting directly to the Sommelier, with support from the Public Rooms Manager, the Assistant Sommelier oversees a team consisting of up to 15 Bar Waiters, 10 Bartenders, and 2 utilities, maintaining professional-level reporting relationships.
Ensure smooth and efficient pantry service for bar areas. Safely load the glass washer to minimize breakages and damage. Adhere to working and cleaning routines, ensuring all items meet required standards. When working in the staff bar, produce beverages to company standards. Timely billing entry and maintenance of par stock levels, conducting stock takes and filling internal requisitions as needed.
